For the person who likes a savoury start (or middle or end) to their day, you’re going to just love this. Personally, it’s one of my favourites. Tempeh is a plant protein so will keep you nicely full for longer, and being fermented and loaded with fibre, it will be of great benefi to your immune system and digestive tract.

Yields1 Serving
 2 tsp coconut oil
 100 g (3½ oz) tempeh, cut into 5 slices
 1 tsp tamari
 2 sheets of toasted nori
 5 thin slices of avocado
 1 spring onion, thinly sliced
 1 small handful of rocket leaves
 1 tsp hemp seeds

Heat the oil in a heavy-based frying pan over medium–high heat. Add your tempeh and cook for about 2 minutes on each side until golden and crunchy. Drain on paper towel then drizzle with the tamari.

Lay your 2 nori sheets beside each other, shiny side down, on a work surface. Lay 2–3 avocado slices on each sheet, about 2.5 cm (1 in) from the edge nearest to you. Next top with the spring onion, rocket, slices of tempeh and hemp seeds. Roll up firmly. Cut in half to serve.
