Sugar Substitute – Spelt is an ancient wheat grain, lower in gluten than our modern day wheat so much easier to digest. This great amber liquid with its characteristic earthy sweet taste is made from the pure spelt, one of the first grains to be grown. Like whole wheat, ancient spelt is nuttier and sweeter and much higher in protein than its processed relatives. You’ll find it in health food stores, on line and some supermarkets. It contains gluten. Look out for it.
