‘Yacon, Hemp and Sesame Snaps’ – recipe. I was just looking for a long post I wrote on rice bran oil in December last year, and came across this delicious recipe. (I haven’t found the rice bran post yet.) Use any seeds or sweetener you like. Yacan is a lovely (expensive) complex sweetener. 1/2 cup yacon syrup (or rice, maple or spelt syrup, or coconut nectar)
1/2 cup hemp seeds
1/2 cup toasted sesame seeds

Optional – add 1/4 cup each chia and sunflower seeds and double the amount of syrup.

Grease an oven or glass tray with your choice of healthy oil. Macadamia would work well but so would coconut – but you’ll taste it.
In a pot over a medium-low heat, warm the yacon syrup for a minute until it starts to gently bubble. Add the seeds and simmer for 3-4 minutes longer, stirring constantly. Pour the mixture onto your tray and flatten with wet hands – size of your tray will determine the thickness of your Snaps. Let the mixture cool completely – about 15-20 minutes – then break into chunks, or cut into squares before it gets to hard to cut. #janellapurcell #yacon #sugaralternatives #CookingOilWeek
